Tomato Rice | Tomato Rice Recipe | Easy Lunch Box Recipe 

Tomato Rice is a famous variety of rice in south India. It is a very quick and tasty main dish. Most of the people prefer it for their Lunch Box. When you bring this for your lunch Box it will be easy to carry and also tasty to eat. Preparation time for this tomato rice is very less. You can just make this tomato rice within 30 minutes.
There are many ways to make this tomato rice, you can make white rice first and then mix with tomato gravy or else you can simply make it together in a pressure cooker.
Here I have done a second method which is doing in a pressure cooker. It is a very easy method and mainly the time-saving method. Bachelors can prefer this method so that the cooking job will be very easy for them. 
In this tomato rice recipe, I have added some special ingredients if you don't like the flavor of them then you can simply skip all those flavor ingredients. It is perfect for Lunch Box.
Here I have explained how to make tomato Rice with step by step procedure.

Servings - 3
Preparation Time - 10 Minutes
Cooking Time - 20 Minutes
Total Time - 30 Minutes


Rice - 1 Cup
Oil - 3 Tbsp
Onion - 1 Cup
Tomato - 5-6
Green Chili - 2
Ginger Garlic paste - 1 Tbsp
Red Chili powder - 1 Tbsp
Turmeric Powder - 1/2 Tbsp
Bay Leaf - 1(Optional)
Cinnamon stick - 2
Star Anise - 2(Optional)
Cloves - 4-5
Fennel Seeds - 1/2 
Mint Leaves - 4-5(Optional)
Coriander Leaves - 1 Tbsp(Optional)
Water - 2 Cups
Salt To Taste


Step 1: Heat Pressure cooker and add 3 Tbsp of oil. 
Step 2: Add bay leaf, star anise, cinnamon stick, cloves, and fennel seeds.
Step 3: Add green chili and stir for 30 sec.
Step 4: Add Mint leaves and Coriander Leaves. Both are optional.
Step 5: Add sliced onion and saute for 2 minutes until the onion gets golden brown in color.
Step 6: Once onion fried, add ginger garlic paste and saute until the raw aroma goes away.
Step 7: Then add sliced tomato and mix well.
Step 8: Add red chili powder, turmeric powder, and salt. 
Step 9: Saute well until the tomato becomes soft. 
Step 10: Once the tomato becomes soft add soaked rice and water.
Step 11: Check salt and cover the pressure cooker and cook for 2 whistles in medium flame.
Step 12: After whistling switch off the flame and let the pressure gets down.
Step 13: Then open and stir for once. The tasty and easy Lunch box recipe Tomato Rice is ready to eat.
